《中等職業(yè)教育中餐烹飪專業(yè)系列教材：烹飪英語》以烹飪常用詞匯為主線，涉及10個(gè)方面的內(nèi)容，包括：蔬菜、水果、小吃、肉類、調(diào)料、烹飪用具、烹飪手法、干果蜜餞、海鮮、飲料等，并配上相應(yīng)的圖片。全書共分10個(gè)單元，每個(gè)單元以上面其中一個(gè)方面的單詞為主，配以日常用語及對(duì)話、重點(diǎn)動(dòng)詞用法、英文菜譜。每個(gè)單元后都有自我評(píng)價(jià)、生詞表�！杜腼冇⒄Z（中等職業(yè)教育中餐烹飪專業(yè)系列教材）》后附有中文菜品名譯成英文菜品名的常用方法、酒店各部門的英文名稱及最常用禮貌用語，以方便學(xué)生實(shí)際運(yùn)用。每個(gè)單元中配有大量的練習(xí)以方便學(xué)生記憶和運(yùn)用。針對(duì)學(xué)生不同的程序及學(xué)生將來工作的需求，在一些菜譜后增加了圖片以便學(xué)生復(fù)述，并在后兩個(gè)單元采用了兩篇商品說明。

《中等職業(yè)教育中餐烹飪專業(yè)系列教材：烹飪英語》“實(shí)用為主，夠用為度”的原則，以中澳項(xiàng)目的科研成果為理念，《中等職業(yè)教育中餐烹飪專業(yè)系列教材：烹飪英語》著重強(qiáng)調(diào)將實(shí)際工作中常用的英語交流用語、專業(yè)術(shù)語、專業(yè)詞匯提供給學(xué)生訓(xùn)練與記憶，同時(shí)使學(xué)生學(xué)會(huì)閱讀英語菜譜及有關(guān)食品使用說明，以便在實(shí)際工作中加以運(yùn)用。
